Air Fryer Chicken Kabobs Recipe (Easy & Healthy)

Chicken and vegetable kabobs are a summertime classic and a fun family meal that’s a hit anytime of the year.

Add in an air fryer, and this classic dish becomes a simple, fast dinner favorite. Serve with your favorite rice or smashed potatoes to make a complete meal!

Skip the grill and opt for your air fryer to make this dish quickly, and without the mess of a grill. Wood skewers can be used in an air fryer just like you would on the grill; the only change you will have to make is cutting your skewers so they will fit in the air fryer.

This simple step can be accomplished by removing the pan of your air fryer and laying the wood skewers horizontally. Cut the skewers about 1 inch shorter than the pan to make sure they fit nicely.

When using your air fryer for kabobs, make sure to leave a little space between your vegetables and meat; this will ensure that your meat will cook throughout the middle.

Also, cook only a single layer at a time to ensure an even cooking temperature throughout.

What Ingredients You Will Need:

  • 1 lb chicken breasts
  • ½ cup soy sauce
  • 1 T brown sugar
  • 1 t salt
  • 1 t ginger paste or fresh ginger, minced
  • 1 T garlic paste or 2 garlic cloves, minced
  • 3 T water
  • 1 red bell pepper, cut into 2 inch pieces
  • 1 yellow bell pepper, cut into 2 inch pieces
  • 1 pineapple, cut into 2 inch pieces
  • 1 zucchini, sliced into 2 inch pieces
  • 1 onion, cut into 2 inch pieces
  • 10-12 wood skewers

How To Make Chicken Kabobs In Air Fryer

Step 1: Make teriyaki sauce: combine soy sauce, brown sugar, salt, ginger, garlic, and water; whisk until combined.

Step 2: Cut chicken into 2 inch pieces and put into teriyaki sauce; marinate in teriyaki sauce for at least 1 hour or up to 24 hours in the refrigerator.

Step 3: To make kabobs in the air fryer, remove the pan insert from your air fryer to measure skewers. The skewers need to be at least a half inch smaller to fit. Use scissors to cut the wood skewers and place horizontally into the air fryer pan to make sure the skewers will fit.

Step 4: Assemble the kabobs by threading the chicken and vegetables onto the skewers, making sure not to pack them on too tightly to make sure the chicken cooks throughout.

Step 5: Place the kabobs into the air fryer pan in a single layer and with space between each.

Step 6: Cook in the air fryer at 400 degrees for 12 minutes.

Step 7: Remove from the air fryer and enjoy with your favorite side such as rice or mashed potatoes.

Optional Modifications:

Most vegetables work great on kabobs, try adding tomatoes, yellow squash, or mushrooms.

Add dijon mustard or BBQ sauce to your marinade to add a nice, zesty twist.

Marinate your chicken for at least an hour and cook the same way as the teriyaki skewers. This variation is wonderful served with a light tomato basil pasta or cold pasta salad.
