How To Make Tex Mex Paste

1)Prepare The Chili

Prepare The Chili
prepare chilis or buy homemade sauce

If you are using Red Chili Pepper, cut it and saute it, after it cools down, puree it using a blender. Alternatively, you could use a garlic chili sauce. I tried it both ways, and I cannot tell the difference. Yet, I find that it saves a ton of time.

2) Prepare The Pureed Onions

Take two Medium-sized onions, cut them into quarters, and puree them in the blender or food processor.

3)Puree The Fire Roasted Tomatoes

puree Fire Roasted Tomatoes

You need to puree about 16 oz of fire-roasted tomatoes. Just like the chilis, I chose the shortcut, by buying a can of Muir Glen Organic, Diced, Fire Roasted, No Salt Added Tomatoes, 14.5 oz, which I pureed.

4) Combine the purees with the rest of the wet ingredients

Combine the rice vinegar, tomato paste, and chili sauce with the purees you made in the first 3 steps into a small pot.

5)Combine All the dry ingredients in a separate bowl

Dry Ingredients of tex mex paste

Combine all the chili powder, paprika, garlic powder, oregano, and the rest of the dry ingredients together. Once you combined all of the dry ingredients in a separate bowl, mix them well and pour them into the pot.

Important Note: Don’t skip the cornstarch, as this helps thicken the sauce into a paste. I used Edward & Sons Let’s Do Organic Cornstarch since its gluten free.

Step 7: Bring To A boil and simmer

Bring the sauce to a boil, reduce the heat to low, and simmer for about 15 minutes. You may want to slightly cover the sauce in order to avoid splatter.

Let it cool down for about 25 minutes before serving or storing it. Before freezing any leftovers, it is best to make sure it cools down completely.

I used the sauce for my weekly dishes (chicken-based mostly) while the rest goes into a zip lock bag, which I freeze and cut into cubes.

The picture below was taken while the paste was hot so it may look like a sauce. However, once it cools down it will thicken to be paste-like texture. In addition, you may want to add more cornstarch if you prefer the paste really thick.
